My own couscous

On 2012-08-28

Ingredients ( 8 persons):

Meats:

500 g of necklace of lamb

500 g of beef to be braised

6 chicken legs


Vegetables

150 g of chickpeas (let dip the day before)

500 g of turnips

500 g of carrots

500 g of zucchinis

3 or 4 hot peppers of bird

2 onions

1 kg of semolina couscous

150 g of raisins

1/2 leeks and 3 tomatoes

Spices

Saffron in strand (or powder)

Sweet pepper, raz el hanout and mixture with couscous, coriander in grains and powder

Or rather 1 bouquet of fresh coriander 

Salt peppers

200 g of butter

Preparation:



Cut the meat of beef and sheep in pieces as well as the onions,

Make onions brown in the pot with some butter as well as the meat, then cover with 5 liters of cold water add spices; salt peppers and chickpeas, 1/2 leeks and 1 tomato (optional), to carry in boiling and cooked the 1 hour with small broth.

Peel vegetables, (turnips and carrots) cut them in pieces, wash zucchinis cut in 3 cm section

At the end of one hour of cooking of the broth, add turnips and carrots, cook 15 minuts then add zucchinis and chicken legs (and the fresh coriander ) let cook 45 minuts slowly.



To prepare the semolina:

Put it in a salad bowl, and pour some salty tepid water, let inflate and remove grains(beads) with a fork, add raisins

Put the semolina in the basket of the steamer and put it on the pot of broth. Dice that the vapor crosses in the fault the semolina, to put back it in the salad bowl.

Renew this process 1 second time.

For sauces:

Ratatouille of Nice

Ingredients ( 8 persons):

  - tomato coulis

  - 2 peppers (a red and a green)

  - 2 or 3 eggplants

  - 5 zucchinis

  - 1 white onion

  - 2 cloves of garlic

  - parsley

  - basil 

  - olive oil 

  - salt and  pepper.

Preparation:

The preparation of the ratatouille begins with the wash and the cut of all the vegetables. Deseed peppers and retail them in fine strips. Keep the skin of zucchinis and eggplants. Cut eggplants in small 2 centimeter dice aside maximum and retail zucchinis in slices.

The peculiarity of the ratatouille of Nice is a cooking separated from the various vegetables. For that purpose, arm yourselves with a frying pan and with a pot. In the frying pan, made warm 3 spoonful with soup of olive oil and make it the sliced thinly white onion return. Add the small strips of peppers and cook them until they are very soft.

On another fire , put the pot to be warmed over a low heat to be able to decant vegetables there as one goes along. Pour peppers and onions there and cook in the frying pan the dice of eggplant in 3 spoonful with soup of olive oil. Repeat the same operation for the slices of zucchinis.

When all your vegetables are in the pot, cover with tomato coulis. Season of salt and pepper. Prepare a chopped parsley by chopping the garlic, the parsley and the basil. Add it to the preparation and rectify, if need be, the seasoning.

French toast, eggy bread

For 4 persons:

 - 6 toasts

 - 2 eggs

 - 10 cl of milk

 - 2 soup spoons of caster sugar
    Butter

   
 Preparation :

1Battez boorishly both eggs with the milk and the sugar in a soup plate. Cut toasts in two in the sense(direction) of the diagonal.

2Trempez quickly the half-toasts in the mixture so obtained (if you leave them too long, they risk to crumble)...

3 and seize them on your biggest frying pan in which you will have placed a knob of butter, 1 mn approximately of every esteemed.

4 Serve, the first bakery is ready, continue with the following one.

To finish... To complete in the test of each: caster sugar, jam, nutella, maple syrup...

French toast, eggy bread

Ingredients :

 - 1/2 liter of milk

 - 2 eggs

 - 50 g of cuil. sugar

 - 2 in soup of vanilla sugar

 - 100 g of butter

 - 6 slices of bread 

 - sweetens powder

Preparation :


    Mix the eggs with the milk. Add the orange blossom. Dip the bread into the mixture egg / milk. Melt a little butter in a frying pan. Cook in the frying pan hanging a few minutes of every , until the bread is brown .

    Spread the caster sugar over the bread.

Potato pancakes in the Emmenthal cheese

Ingredients:

- 600 g of mashed potato

- 125 g of worn cuil. Emmenthal cheese

- 2 soup spoon of flour

- 1 egg

- nutmeg peppers

- salt

Preparation:

    In a bowl, mix the mashed potato and the worn Emmenthal cheese.
    Add the flour, the egg, the salt, the pepper and the worn nutmeg.
    Mix.
    Make warm the olive oil in a frying pan .
    Put down a soup spoon of mashed potato.
    Give up slightly with a fork to form pancakes.
    Cook on average fire on both faces during 5 minutes until they are brown well.
    Serve warmly.

Potato pancakes

Ingredients For 4 persons:

  - 2 eggs

  - 40 g of flour

  - 600 g of potatoes

  - 15 cl of milk

  - 10 cl of single cream

  - ground garlic

  - salt and peppers

  - parsley

  - nutmeg

Preparation :

  Clean potatoes,  peel its then  cut its roughly pieces. Cook its in the pressure cooker in 4 cms of hanging salt water 8 in 10 minutes.

  Drain and cross its in the mixer so as to obtain a smooth purée. Break eggs in a bowl and mix its as to make omelet.

  Pour the purée in a salad bowl,  make a well for the center and pour eggs with the flour, the milk, the single cream, the garlic and the parsley there.

  Mix energetically so as to obtain a very homogeneous purée and rectify the seasoning by adding salt and pepper.

  Pour a soup spoon of oil in a big frying pan and let warm a few moments before cooking pancakes. Pour into the frying pan the value of a big soup spoon of purée for every pancake.

   Return when they just begin to brown, a face, then the second. Once both well cooked faces, to leave pancakes still little on the fire to brown its uniformly.

To finish... Potato pancakes have to eat warm. So, place them according to the cooking in a plate put on a pan of boiling water.galettes-moelleuses-pommes-terre-384646.jpg

2007 , very bad year

Yes, as said in the title, 2007 was a cursed year:
In the order:
Retirement

Death of our small Leo  (dog)

Separation (my love life congealed on certain December, 2007)

Death of my father

All these in the same year, that makes a lot, too much.

I wish to nobody to live such events some behind the others with dates so moved closer.
